CRANBERRY PECAN BRIE BITES



These Cranberry Pecan Brie Bites are perfect for holiday entertaining! Whether you make them for Thanksgiving, Christmas, or New Year’s, no one will be able to resist the gooey melted brie, tart cranberry sauce, and toasted pecan atop a piece of naan! Easy and fabulous – just what holiday entertaining should be!

Holiday entertaining is one of my very favorite things. I love planning and preparing food for friends and family and appetizers are my very favorite. When it comes to holiday entertaining, appetizers are the one element that can make or break or party. It’s really more about quality over quantity. Having a few, good appetizers is much better than putting too many so-so options in front of your guests.

Cranberry Pecan Brie Bites

Serves: 12 servings

Ingredients

Cranberry Sauce
  • 12 oz fresh cranberries, rinsed and picked through
  • ¾ cup sugar
  • ½ cup orange juice
  • ½ cup water
  • pinch of salt
  • 1 cinnamon stick
  • 1 piece of orange peel
  • 2 8.8 oz packages Original Stonefire naan flatbread
  • 1 8 oz package brie
  • 24 pecan halves
  • fresh thyme to garnish



Instructions

Cranberry Sauce
  1. Combine sugar, orange juice, and water in a large saucepan over medium heat. Stir to combine.
  2. Add cranberries, salt, cinnamon stick and orange peel.
  3. Bring to a simmer over medium heat, stirring frequently.
  4. Continue cooking, for about 10 minutes, or until all or most of the cranberries have popped.
  5. Let cool for at least 30 minutes. Refrigerate until ready to use.

To prepare
  1. Preheat oven to 400F. Line a baking sheet with parchment paper and set aside.
  2. Cut naan into pieces using a pizza cutter. Aim for 6 to 8 pieces per naan.
  3. Cut small wedges off the wheel of brie and place on top of the naan.

Cranberry-Cream Cheese Crescent Bites



These one-bite cranberry and jalapeño-cream cheese crescent appetizers are easy to make and sure to be a "wow" with your guests.

Ingredients


  • 4 oz cream cheese, softened
  • 3 tablespoons chopped dried cranberries
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon finely diced seeded jalapeño chile
  • 1 can (8 oz) Pillsbury™ refrigerated crescent dough sheet or 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls



Steps


  1. Heat oven to 375°F. Line two cookie sheets with cooking parchment paper.
  2. In medium bowl, mix cream cheese, cranberries, chives and jalapeño chile.
  3. Unroll dough on work surface. Press into 12x8-inch rectangle. (If using crescent roll dough, firmly press perforations to seal.) With pizza cutter or sharp knife, cut into 6 rows by 4 rows to make 24 squares.

As you know, my favorite part about any holiday (after the meaningful stuff like family and togetherness, etc.) is the food. Actually, my favorite part of any given day just might be the food, but hey, to each her own. The Christmas season is especially fun because there are all sorts of opportunities for delicious little snacks that you generally don’t eat all year long. I mean, we’ve already gone through more cheeseballs in the past three weeks than we do for the entire rest of the year, and don’t even get me started on Lil’ Smokies! Anyway, I wanted to make a festive, but still easy, holiday snack you could take to any party, so I came up with these Christmas tree spinach dip breadsticks.



Ingredients 


  • 12 oz frozen chopped spinach, thawed and squeezed dry
  • 6 oz cream cheese, softened
  • 2 garlic clovers,minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon chili powder
  • 1 teaspoon italian seasoning
  • 1/2 cup greated parmesan cheese
  • 1 cup cheddar or mozerella cheese

Ingredients

  • 2 8 oz packages Challengecream cheese, softened
  • 4 oz goat cheese
  • 4 oz white cheddar cheese, grated (I grate the cheese on the smaller opening)
  • ½ cup roughly chopped dried cranberries
  • ½ cup finely chopped pecans
  • ¼ cup thinly sliced chives
  • Coating
  • ½ cup thinly sliced chives
  • ½ cup finely chopped pecans
  • ½ cup chopped dried cranberries
  • 30 pretzel sticks



Instructions

  1. Combine the ingredients in a large bowl, stirring until combined.
  2. Use a cooke scoop to scoop out small balls.
  3. Roll into a ball using your hands.
  4. Place chives, pecans, and cranberries into separate, shallow bowls.

Cocktail meatballs make the best appetizers, and this Crock-Pot orange cranberry meatball recipe is probably the easiest appetizer ever! It’s perfect for holiday entertaining, or you can even turn this into an easy fix it and forget it type of dinner — just like we did tonight.

My grandmother always made the most amazing cocktail meatballs whenever my parents had their annual Christmas party. Everything was made from scratch, from the meatballs to the sauce, and these were some awesome meatballs. Honestly, all of the guests raved about them!

So, I’ve been trying to find my grandma’s recipe, without much luck. But in the meantime, I have an easy cocktail meatball recipe that tastes just as good and is made entirely in your slow cooker. Seriously.

Crock-Pot Cranberry Orange Meatballs

Crock-Pot cranberry orange meatballs are made in the slow cooker and simmered in an easy cranberry orange sauce for easy perfect holiday appetizers
